Instant Pot Beetroot Pulao

The Beetroot Rice is a super simple, quick to cook and delicious recipe that can go into your family lunch (lunch box) or dinner. Beetroot is one for those few vegetables which give the rice a nutty flavour and subtle sweetness.

Beetroot has several nutrients needed for good health and also virtually fat free and low in calories. It’s a great way to get the kids to eat beetroot. They are perfect for lunch box too. As I said, this beetroot rice is a great meal for children as young as 12 months. While cooking for children very young, cook the rice to a softer texture, so that it will be easier for them to digest. Just add cumin seeds and try to avoid all other whole spices ( including ginger-garlic paste and garam masala).

Servings: Serves 2–3

Ingredients:

1 cup basmati rice

1 medium beetroot, shredded

1 small onion, chopped

1 tsp ginger- garlic paste

2 green chilies

1/4 turmeric powder

1/2 tsp garam masala

2 tbsp coconut oil

1 tbsp ghee

1/4 tsp cumin seeds

2 cloves

2 small cinnamon sticks

1 bay leaf

10 cashew nuts

1.5 cup water

Salt to taste

2 tbsp coriander leaves, finely chopped

4 tbsp lime juice (juice of half lime)

Method:

  1. Wash and soak the basamti rice for 20 mins.
  2. Turn on your Instant pot, press saute button.
  3. When it is hot, add coconut oil and ghee.
  4. Add cumin seeds, cloves, cinnamon sticks, bay leaf and green chilies. Saute it for few seconds.
  5. Add onion and ginger- garlic paste. Saute it for a minute.
  6. Add cashew nuts and fry it well.
  7. Add turmeric powder, garam masala and shredded beetroot. Saute the beetroot well.
  8. Now add soaked and drained basmati rice along with water (1.5 cup) and salt. Gently mix altogether and turn off IP.
  9. Cover the IP lid with valve to sealing. Press pressure cook ( or manual) button and set the cooking time to 6 mins in high pressure.
  10. Once it’s done, let the pressure release naturally for 10 mins. Then do a QPR.
  11. Open the lid and gently fluff the rice with fork. Add coriander leaves and lime juice. Mix well.
  12. That’s it! Instant pot Beetroot rice is ready to taste.
  13. Serve it with your choice of raita (or with plain yogurt) and Enjoy!
