A unique and super healthy chaat recipe, raw peanuts boiled with turmeric and tossed with chopped vegetables and few spices.

Peanut chaat or peanut salad is very refreshing, tasty, easy and nutritious salad that is quick to make and perfect evening snack recipe to serve along with a hot cup of tea. Peanuts are low in carbs, a good source of dietary Protein, rich in energy and has many health benefiting nutrients, antioxidants, vitamins and minerals essential for good health.

Cook time : ~30 mins. 
Servings : Serves 2-3

Ingredients:

  • 1 cup raw peanuts (shells removed)
  • 1/2 onion, finely chopped
  • 1 small tomato, finely chopped
  • 1/4 cup cucumber, finely chopped (~10 slices, finely chopped)
  • 1/4 tsp turmeric powder
  • 1/4 tsp chaat masala powder
  • 1/4 tsp red chili powder (or less)
  • Salt to taste
  • 2 tbsp lime juice
  • 1/4 cup Indian Sev (fine sev or regular) (optional)
  • 2 tbsp coriander leaves, finely chopped
  • 2 cups water (to cook peanuts)

Method:

  1. Wash the peanuts well in running water. I’ve used store bought shells removed raw peanuts. (Its good to wash before you cook).
  2. For Instant Pot users, manual / pressure cook the peanuts with turmeric powder, 2 cups of water and pinch of salt for 10 mins. (OR in the Pressure cooker, cook the peanuts with turmeric powder, 2 cups of water and pinch of salt for about 2 whistles).
  3. Let the pressure release naturally. Then drain off the peanuts completely.
  4. In a large mixing bowl (or serving bowl), take cooked peanuts, onions, tomatoes, cucumbers, chaat masala, red chili powder, salt and lime juice. Mix all together and toss it up well.
  5. Sprinkle the fine sev and chopped coriander leaves on top of the chaat.
  6. Serve immediately and Enjoy!!
